    Kiweenie writing Chinese Title

Ni Hao class (do you remember what that means?). Kiweenie Lao Shi here again with part two of my lesson about the Chinese language. We learned how to say a few helpful phrases in our last class and I hope you've been practicing them. We've been using them a lot here in China! As you've been touring Beijing with us you've probably noticed that the spoken language is not the only part of Chinese that is very different from English.

The Chinese writing style is extremely different as well. Instead of letters to write words they use pictures! Originally Chinese characters first developed as pictographs (pictures to represent an object) and ideographs (pictures to represent an idea).

For instance, here is the Chinese character for the word face (mian) . This character was originally a pictograph of a face. It might not exactly look like a face to you, but this is how it likely evolved over thousands of years.

Development of the character for face mian.

Then there are ideographs like the character for the word up (shang) and the numbers 1, 2, 3, (yi, er, san) 一 二 三 . You can really see how the ideas of up and counting are expressed in these characters.

Chinese has developed into a much more complicated language over the centuries and now there are lots of character combinations and characters that represent sounds and lots of complex stuff that makes my head spin, so we'll leave it at this for today.

Oh, wait, but one more thing to know about written Chinese is that it is very important that the correct "stroke order" be followed when you are writing a character. To show you what I mean we've made this video of the character for face being written in the correct order. Imagine if you had to write all your letters in the same order as everyone else for it to be correct? Chinese is definitely a tricky language. Zaijian!

    animated version of character mian

Also, here is a helpful chart of all the words you've learned in both my language lessons.

Eating in China is soooooo much fun! You just walk around the street and there are people with little carts set up, or in tiny storefront shops, selling delicious dumplings, soups, buns, and my new favorite—spring onion pancakes! The only way these are anything like a pancake is they're flat. Other than that they are more like a yummy, savory, fried dough (I definitely wouldn't recommend them for breakfast). In China, they only cost us about ten cents each, and I got one fresh from the cooker. It was so hot it burned my hands, but it was worth it!

I really wanted to learn how to make these so I got Moo-Cow's expert cooking help. It turns out that they are simple to make with just a few basic ingredients! Here's our recipe. I hope you find them as delicious as we do!

    Spring onion pancake ingredients

    You'll Need

    • 3 cups plain flour
    • 1/2 cup hot water
    • 1 cup cold water
    • 1 tsp oil (plus some for cooking)
    • salt (optional)
    • 1 small bunch of spring onions (about 5 or 6 stalks)

    Mixing ingredients

    1. Mix the flour, oil, hot water and a dash of salt together in a bowl until crumbly.

    Kneading dough

    2. Add the cold water while gradually working it into the dough. Mix until you have an sticky dough with even consistency. You don't have to use your hands like Moo-Cow, but if you do be sure to flour them to help keep the dough from sticking.

    Covered dough

    3. Cover the dough and let it sit for 30 minutes.

    Cut spring onions

    4. While you wait for your dough, cut your spring onions (aka Scallions) into litte round slices. Don't be afraid to cut the onion all the way down to the end, it's all good!

    Flatten dough.

    5. Spread out a piece of wax paper and dust it with flour. Rip off a hunk of dough and flatten it out into a thin circle.

    Adding spring onions

    6. Sprinkle your flattened dough with the chopped spring onions.

    Roll the spring onion pancake

    7. Roll your spring onions up in the dough.

squishing the spring onion pancake flat

    8. Squish your roll back into a flat pancake! Make sure you flatten it pretty well so it cooks properly.

    frying up spring onio pancakes

    9. Add some oil to your pan and get it good and hot. Fry your spring onion pancakes until they are golden and crispy on both sides.

    Eating spring onion pancakes

    10. Eat them while they're hot (but not too hot)!

Also, you can follow Moo-Cow's lead and make a simple dipping sauce. He made his with 2 parts soy sauce, 1 part rice vinegar, some garlic slices and a sprinkle of chopped spring onions. Mmmm, soooo good!

F.W. Plays Music in Jinshan Park

    J
ingshan park is located directly across the street from the Forbidden City. The hill in the center of the park was built from the dirt that was moved to make the moat around the Forbidden City, and it is said that it was built to protect the palaces from the evil sprits that blew across the land (the spirits were most likely the dust storms that can still be a problem in the city now).

While it was once a relaxation garden for the emperors, it is now a park that anyone can enter…and many do! We went on a Sunday and the place was filled with people! Around every tree were small groups singing songs, people practicing calligraphy by writing on the sidewalks with large brushes dipped in water, men and women twirling large colorful ribbons while dancing, and people playing games, exercising, and even a woman doing tai-chi with a sword!

    Ribbon Dancing in Jinshan Park

We loved walking around and watching everyone. There was a mixture of people from all walks of life and of all ages. In fact, some of the most active people we saw were in there seventies and eighties! Nobody seemed to feel self conscious or embarrassed about how they acted or moved either. We even saw a businessman, who was walking with his wife, suddenly break out into a little dance as he passed one of the many stereos blaring music. Nobody even looked twice. It was really inspiring to see such an active culture and I wish there was a park at home like it.

After we people watched for a while, we walked to the top of the hill. Even though it is the highest point in Beijing, the hill wasn't that hard to climb. Along the way to the top we passed by a bunch of different pavilions. They represent one of the five tastes: sweet, sour, bitter, acrid and salt. There used to be a copper Buddha statue in the middle of each one, but they were stolen in the 1900's.

At the top is the Ten Thousand Springs pavilion, and from up there you could see all of Beijing. We could also see the whole of the Forbidden City and we realized just how far we walked the other day when we toured it! Standing on that hill observing modern and ancient Beijing at once with the sounds of singing groups drifting up from below, we really realized we were in an all round amazing place!
