Anzac Biscuits

One of the most important holidays in Australia is ANZAC day, celebrated on April 25. ANZAC stands for Australian New Zealand Army Corps, and the day celebrates the brave deeds of the men who fought in World War I. There are huge celebrations held every year, and many people celebrate by making ANZAC biscuits (cookies). These cookies were created during the war when people would send them in care packages to the soldiers. You can make a batch of these anytime of the year, but make sure to bake a batch to celebrate ANZAC day!

You'll need:anzac.jpg

  • 1 cup rolled oats
  • 3/4 cup dried coconut
  • 2 tbsp boiling water
  • 4 oz butter
  • 1 cup all purpose flour
  • 1 cup sugar
  • 1/2 tsp baking soda
  • 1 tbsp golden syrup (or dark corn syrup)

Directions:

Preheat oven to 300 degrees. Combine oats, coconut, flour, and sugar in a medium-sized bowl. In a saucepan, add the butter and syrup and stir over low heat until the butter melts. Mix the baking soda with the boiling water and add to the saucepan. Pour the contents of the saucepan into the flour mixture and stir with a spoon until it is solid dough. Drop small balls of the dough onto a lightly greased pan and flatten with your hand, but allow the cookies room to spread. Bake the cookies for 20 minutes or until they are golden brown. Enjoy!

Golden Syrup?

What is golden syrup? And can you skip the coconut or use something else in it's place?

I'm not trying to be picky but I just don't like coconut and my mom wants to know what golden syrup is. Maple syrup or some special syrup made out of gold?! :-0

Gold Juice.

Hey Gomoo, don't you know? Golden syrup is what you get when you put gold in a juicer! ;) Not really.

I'm glad you asked that question, because Moo-Cow meant to write in that recipe that you can safely substitute dark corn syrup for golden syrup. It's not exactly the same but still completely delicious. Golden syrup isn't easy to find in America, so don't try too hard to find it. Here is some more information about it in case you are interested. 

 

"Golden syrup is a thick, amber-colored form of inverted sugar syrup, made in the process of refining sugar cane juice into sugar,
or by treatment of a sugar solution with acid. It is used in a variety
of baking recipes and desserts. It has an appearance similar to honey, and is often used as a substitute for people who cannot eat honey and those who choose not to (such as vegans). It can also be used as a substitute for corn syrup."

 

Also, I'm sure these will still be yummy without coconut. In fact the origin of the ANZAC Biscuit is the scottish "rolled oats biscuit" which didn't have coconut at all.
